I personally don’t want to spend hours and hours in the kitchen. I’ve got lots of things on the go, so when it’s time to make lunch, I want to be feel confident that I can whip up something quick, but it has to be healthy, filled with wholesome goodness, and mostly raw.
Lunch is when we eat our biggest meal of the day, so it’s important that our lunchtime meals fuels us with energy and doesn’t make us feel sluggish, drained or bloated.

VEGAN BUDDHA BOWL WITH CUMIN-ROASTED CHICKPEAS
This delicious, healthy bowl is gluten free, takes under 20-minutes to make and is filled with flavor! It’s loaded with chickpeas, beets, red onion, avocado, zucchini zoodles, pumpkin seeds, baby spinach and kalamata olives.

I love Thai flavors! So when I saw this delicious recipe loaded with fresh veggies, coconut rice and mouth-watering Thai peanut sauce, I just couldn’t resist! I’m not a big fan of tofu, but this recipe makes me want to give it another try.

I absolutely love Chipotle Inspired bowls! I make them at least once a week and it’s a huge hit in our home. This healthy bowl features rice, corn, beans, and lettuce. I spend a little extra time on this one becuase I love making fresh garlicy guacamole and spicy pico de gallo!! De-Li-Cious!!
garden veggie vegan buddha bowl (gluten free)
This Buddha bowl is loaded with wild rice, quinoa, chickpeas, radishes, seeds, berries and herbs! Gluten-free, guilt-free and loaded with nutrients, you just can’t go wrong with a lunch like this. Just keep in mind, that although this recipe says it takes 20-minutes, you will have to pre-cook your wild rice and quinoa, so that might take you extra time. It always does for me.
Middle Eastern Bean Salad - Balela
This easy but simply amazing dish never lasts in our home. I always try to make extras hoping we would have some leftovers, but it tastes soooo good, it’s gone before I can blink my eyes! It’s loaded with beans, fresh tomotoes, cilantro, parsley, onions, mint, cucumber and spices. Try it and I promise you will not be disappointed.
Vegan Hippie Salad
When you are in a rush and you need something wholesome, nutritious and packed with flavor, this recipe will not disappoint you! I’m sure you’ll have all the ingredients you need to whip up this tasy bowl in under 15-minutes. It’s filled with fresh greens (like arugula, spinach, kale, or whichever greens you love), plus juicy grape tomoatoes, chickpeas, cumcumbers and avocado! Grab your Vitamix and whip up a delicious blend of vegan cheesy cilantor dressing and you’ve got yourself an incredibly delightful meal.
